Homemade Sour Cream

Recommended by the National Heart, Lung, and Blood Institute

2 Tbsp. skim milk
1 Tbsp. lemon juice
1 cup low-fat cottage cheese

Place all ingredients in a blender, and combine on medium-high speed until smooth and creamy. Yields eight 2-1/2 Tbsp. servings.
